This week my ward had a food storage enrichment night and I actually learned a lot of things! A lady from my ward and her daughter-in-law showed lots of great things. (the daughter-in-law is my age and I feel dumb for being so ignorant about having/using food storage)
1- you can bottle butter and keep it from 3-5 years. wow! I had NO idea! (google "bottled butter" for info on how to do it!)
2- if you cover raw eggs in mineral oil, you can preserve them without refrigeration for a year. You rub the oil all over, keep them in the carton in a basement/cupboard type environment and you're good! Who knew?!
3- egg substitutes that would be good without preserved eggs:
3 Tbls or water + 1 tbls flaxseed = 1 egg
1 tsp unflavored gelatin + 1 tsp COLD water + 2 Tbls hot water and stir = 1 egg
4- you can bottle anything-- m&ms, granola, choc chips. just put the item in a jar, boil the lids and put them on to seal
5- this is a great website with lots of food storage ideas, like how to do in on $8/week, how to get 52 weeks worth of food, etc. http://theideadoor.com/FoodStorage.html
There's a blog I found about canning too-- http://youcancan.blogspot.com
